Eggs Caprese

This delicious brunch is a great combination of flavours, zesting up the humble poached egg - making the perfect Sunday brunch.

Ingredients:

  • 1 muffin per person
  • Eggs to poach
  • 2 tbsp of green pesto
  • 1 red onion
  • 2 red tomatoes
  • 2 fresh green chillies
  • Grated cheese

Method:

  1. Chop up the onion, green chillies and tomatoes and mix with the pesto in a bowl.
  2. Toast the muffins for 2 minutes and then load the onion mixture onto each muffin.
  3. Top with some grated cheese and put back into the grill for 2 minutes while your eggs are poaching.
  4. Served with poached eggs on top and a garnish of homemade chipotle mayonnaise.
