This delicious brunch is a great combination of flavours, zesting up the humble poached egg - making the perfect Sunday brunch.
- 1 muffin per person
- Eggs to poach
- 2 tbsp of green pesto
- 1 red onion
- 2 red tomatoes
- 2 fresh green chillies
- Grated cheese
- Chop up the onion, green chillies and tomatoes and mix with the pesto in a bowl.
- Toast the muffins for 2 minutes and then load the onion mixture onto each muffin.
- Top with some grated cheese and put back into the grill for 2 minutes while your eggs are poaching.
- Served with poached eggs on top and a garnish of homemade chipotle mayonnaise.
