French Toast with Berry Compote

 

The combination of cinnamon sugar dipped toast and the burst of flavours from the berries is just perfect.

Ingredients:

  • 4 eggs
  • 78ml single cream
  • 78ml semi-skimmed milk
  • 4 tbsp caster sugar
  • 1 tsp ground cinnamon
  • 25g butter
  • 8 slices of fruit loaf bread
  • Vanilla ice cream to serve

Berry Compote:

  • 4 tbsp caster sugar
  • 300g frozen mixed berries

Method:

  1. Firstly, make the berry compote. 
  2. Place the sugar and 2 tbsp water in a pan and stir over a low heat till the sugar dissolves.
  3. Increase the heat to high, bring the mixture to the boil and cook for 3 minutes or until the mixture starts to thicken. Stir in the berries and cook on low for 10 minutes.
  4. Place the eggs, cream and milk in a bowl and whisk.
  5. In a bowl combine the sugar with the cinnamon.
  6. Dip the bread into the egg mix and cook both sides till golden.
  7. Once done, toss into the sugar mix.
  8. Repeat this step till all are done.
  9. Serve with vanilla yoghurt, mascarpone cream or ice cream.
